Alison's Sugar Cookies

Ingredients

(For about 30 cookies)

 

2/3 cup soft butter

3/4 cup sugar

1 tsp baking powder

A pinch of salt

1 tsp vanilla extract

1 egg

2 cups flour

Frosting (optional)

 

 

Instructions

 

1 - In the bowl of a stand mixer using the paddle attachment, mix the butter and the sugar together until creamy.

 

2 - Add the baking powder and the salt, stir.

 

3 - Add the vanilla extract and the egg. Stir.

 

4 - Add half of the flour and stir.

 

5 - Add the other half of the flour and stir until just combined. Do not over-mix! 

 

6 - Form a ball, wrap it in plastic wrap, and put it in the freezer for 10-15 minutes.

7 - Preheat oven to 375°F.

 

8 - Flour a flat surface.

 

9 - Spread the dough into a rectangle (thickness of your choice). Use cookie cutters to cut out shapes.

10 - Lay cookies on baking sheets 1 inch apart from each other.

 

11 - Bake for about 7 minutes, or until the edges are just beginning to turn golden.

12 - Allow to completely cool before frosting.

 

13 - Frost the cookies with the frosting of your choice (optional).
