Beet Salad
Starters
Ingredients
1 large green apple
3 to 4 raw beets
A handful of fresh kale
1 small onion
The zest of 1 lemon
Hard boiled eggs
For the dressing:
1 Tbsp Dijon mustard
The juice of 1 lemon separated in half
3 Tbsp red wine vinegar
1/4 cup olive oil
1 Tbsp honey
Salt and pepper to taste
Instructions
1 - Peel and cut the apple into strips.
2 - Slice the onion.
3 - Wash, peel and roughly cut the beets into pieces. Put the pieces in a food processor and chop or shred to desired consistency. Transfer to a large bowl.
4 - Add the lemon zest, onion and apple to the beets and stir to combine.
5 - Add the kale.
6 - In a small bowl, make the dressing by whisking together the mustard, red wine vinegar, olive oil, honey, half of the lemon juice, salt and pepper. Drizzle on salad. Stir.
7 - Add sliced or diced hard boiled eggs to the salad. Drizzle the other half of the lemon juice.
