Bugnes

Ingredients

 

2 1/2 cups flour 

1/2 cup sugar

3 eggs

The zest of 1 lemon

2 tsp baking powder

1/4 cup soft butter

A pinch of salt

3 Tbsp orange blossom water OR 3 Tbsp rum

Oil for frying

 

 

Instructions

 

1 - Mix together the flour, the sugar, the lemon zest, the baking powder, and the salt.

2 - Add the eggs, the butter, and the orange blossom water or rum. Knead with your hands until you can form a nice dough. (Add flour if too sticky.)

3 - Form a ball with your dough, and leave it alone for half an hour at room temperature.

​

4 - With a rolling pin, spread the dough about half an inch thick.

​

5 - Cut large stripes horizontally. Then, cut diagonally to make diamonds.

​

6 - Make a hole in the middle of the diamonds, take the tale and pass it through the hole pulling a little to form the shape of a bugne.

​

7 - Heat oil over medium-high heat. When hot, fry the bugnes a handful at a time until golden, flip and cook the other side.

​

8 - Transfer to a plate lined with paper towels, and sprinkle the bugnes with sugar.

​
