Chocolate & Zucchini Bread

Ingredients

1 1/2 cups flour

1/2 cup unsweetened cocoa powder (sifted)

1 tsp baking soda

1 tsp cinnamon

A pinch of salt

2 eggs

1/4 cup melted butter

1/4 cup canola oil

1 tsp vanilla extract

4 oz apple sauce

1/4 cup coffee or espresso

3/4 cup brown sugar

1 cup shredded zucchini

1 cup mini chocolate chips

 

 

Instructions

1 - Preheat oven to 350°F. Line a loaf pan with parchment paper.

2 - In a medium bowl, mix together the flour, cocoa powder, baking soda, cinnamon, and salt. Set aside.

3 - In the bowl of a stand mixer, mix the eggs with the melted butter, canola oil, vanilla extract, apple sauce, coffee, and brown sugar. Beat until smooth using the paddle attachment.

4 - Add the remaining dry ingredients. Beat until smooth.

 

5 - Add the shredded zucchini and 2/3 of the chocolate chips. Beat until just combined.

6 - Pour batter into loaf pan. Sprinkle the remaining chocolate chips over the top.

 

7 - Bake for 45 minutes to an hour.
