Cinnamon Apple Cake

Ingredients

​

6-8 apples, peeled and chopped in medium cubes

1 Tbsp cinnamon

5 Tbsp regular sugar

​

1 cup vegetable oil

1/2 cup regular sugar

1/2 cup brown sugar

1/4 cup apple juice

3 Tbsp rum or cognac

1 Tbsp vanilla extract

2 cups + 3/4 cup flour

2 tsps baking powder 

A pinch of salt

4 eggs

Instructions

​

1 - Preheat oven to 350°F. Grease a bundt pan with butter.

 

2 - Combine apples with cinnamon and sugar in a small bowl and set aside.

​

3 - In a stand mixer, whisk together the oil, orange juice, sugars, rum or cognac, and vanilla extract. 

​

4 - Add the eggs and stir until smooth.

 

5 - Add the flour, baking powder, and salt. Mix together until combined (batter will be thick).

​

6 - Spoon a few tablespoons of the batter into the bottom of the bundt pan. Cover the batter with a layer of apples. Spoon a few more tablespoons of batter on the apples. Repeat, ending with a layer of batter.

​

7 - Bake for about 45 minutes to 1 hour. 

 

8 - Allow to cool and remove from pan.
