Coconut Mousse

Ingredients

 

14 floz can coconut cream

1/4 cup sugar

1/2 cup coconut flakes or coconut flour (I use coconut flakes that I put in my grinder)

5 egg whites

A pinch of salt

 

 

Instructions

 

1 - Mix the coconut cream, sugar, and coconut flour together.

 

2 - In a bowl, beat the egg whites with the salt until stiff. Add to the previous mixture and combine incorporating air with a spatula.

 

3 - Pour the batter into ramekin dishes and reserve in the fridge for a minimum of 4 hours.
