Fougasse
Ingredients
2 1/2 cups + 1/4 cup flour
1 cup sugar + 1 Tbsp
1/2 packet dry yeast
6 oz warm milk
3 Tbsp olive oil
4 Tbsp orange blossom water
1 egg
2 Tbsp milk for brushing
Instructions
1 - In a bowl, mix the warm milk and the yeast with 1 Tbsp sugar. Set aside until foamy.
2 - In a bigger bowl, whisk together the olive oil, the orange blossom water, the egg, the sugar, and the yeast mixture.
3 - Add the flour and stir with a wooden spoon. Transfer to a flat surface and knead by hand for a few minutes. Form a ball and place in a clean bowl. Cover with plastic wrap and let rise in a warm place for 1 hour.
4 - Preheat oven to 350°F.
5 - Dump the dough onto a flat surface and spread it with the rolling pin forming an oval shape (1 inch thick). Cut holes here and there with scissors to make a beautiful pattern.
6 - Place the fougasse on a baking tray lined with parchment paper.
7 - Bake for about 20 minutes. 5 minutes before the end, spread milk on the fougasse with a brush and continue baking until golden.
