Strong Gingerbread
*** This gingerbread is very strong in flavor and is not as sweet and as moist as traditional gingerbread. This recipe is particularly made for people who eat gingerbread with foie gras. Find my traditional moist gingerbread recipe here.
Ingredients
2 + 1/4 cups flour
4 Tbsp almond flour
1/2 cup brown sugar
1 Tbsp ginger
1/4 tsp ground star anise or 1 small star anise
2 Tbsp cinnamon
2 tsp nutmeg
1/2 tsp pepper
1/2 tsp cloves
1 Tbsp baking soda
1 cup warm milk
1 vanilla bean
3 Tbsp orange juice
3 eggs
1/3 cup honey
Instructions
1 - Preheat oven to 350°F.
2 -In a small bowl, combine all the spices.
3 - In the bowl of a stand mixer, mix all the dry ingredients together in a bowl (except the star anise if using.)
4 - Heat a saucepan over medium heat and boil the milk with the vanilla bean cut in half (and star anise if using.)
5 - Remove star anise and vanilla bean. Scrape the vanilla bean to collect the seeds and discard the vanilla bean. Put vanilla seeds back in the milk.
6 - Add all the other ingredients and the warm milk to the dry ingredients, and stir using the paddle attachment until you obtain a smooth batter.
7 - Pour the batter into a greased loaf pan.
8 - Bake for about 40-45 minutes.
