Homemade Noodles

Ingredients

(For 4 people)​

3 cups flour

5 eggs

1 tsp salt

1 Tbsp olive oil

About 4 Tbsp water

Instructions

​

1 - In the bowl of a stand mixer, beat the eggs with salt and olive oil.


2 - Add the flour, knead well using the hook attachement. Add water 1 Tbsp at a time until dough comes together.


3 - Place in the fridge wrapped in plastic wrap for 30 minutes.

 

4 - After 30 minutes, flour your pasta machine and start making noodles. Start by using the largest setting (the biggest size). Use it a couple of times folding the dough several times if necessary until it becomes smooth. Then, go down one size at a time passing the dough through the machine once for every size. Repeat until the desired thickness. Then, use the setting of your choice to make fettuccine or spaghetti...

5 - Put the noodles aside on a floured surface.

 

6 - Boil water in a large pot and add some salt. Cook the noodles a handful at a time for about 2 minutes.

 

7 - Once, cooked, drain and transfer the noodles to a dish and drizzle with olive oil.

​

 

Enjoy with tomato sauce, cheese sauce, pesto, beef bourguignon, daube Niçoise...
