Leek Tart
Ingredients
For the crust:

1 1/3 cups + 4 Tbsps flour
1 stick softened butter + 2 Tbsp in pieces
1 egg
1 Tbsp water
A pinch of salt

Instructions
1 - Preheat oven to 400°F.
2 - Mix the flour with the butter until you obtain a sand-like texture.
3 - Then add the egg, the water, and the salt and stir together to form a nice dough. Place in the fridge for 15 minutes.
4 - With the rolling pin, spread your dough and place it in a greased pie dish or on parchment paper.
5 - Make some holes with a fork, add the butter in pieces here and there.

Ingredients

For the filling:
3 leeks chopped
1 Tbsp olive oil
1 Tbsp butter
3 eggs
3/4 cup heavy whipping cream
3/4 cup milk
1 Tbsp Dijon mustard
Salt and pepper
1 bouillon cube
A handful of grated cheese
1 Tbsp herbes de Provence
Instructions
1 - Brown the leeks in butter and oil for about 5 minutes.

2 - Throw the leeks in boiling water with the bouillon cube and boil for 10 minutes. Drain.
3 - In a bowl, beat the eggs.
4 - Add the cream and the milk, stir.
5 - Add the salt, pepper, and herbes de Provence.
6 - Spread the mustard on the crust and add the leeks on top. Pour the eggs on top and sprinkle with cheese.
7 - Bake for 25 minutes.
