Blanc Manger

Ingredients

 

For the caramel:

 

½ cup sugar

3 Tbsp + ½ tsp water

For the flan:

 

4 eggs

1 cup coconut flakes 

½ cup sugar

1 12 floz can evaporated milk

 

 

Instructions

1 - Put coconut flakes in a food processor to grind into smaller pieces.

2 - Generously grease a pie dish with butter.

3 - Place dish on a shallow baking tray or a bigger shallow dish.

For the caramel:

 

1 - In a small saucepan, boil over medium heat the sugar with 3 Tbsp water. DO NOT STIR!

2 - Once the sugar becomes a light to medium brown color (not dark), remove from heat and add ½ tsp of water (watch for hot projectiles!). Using a spoon, stir until you obtain a smooth caramel.

 

3 - Immediately pour caramel in the greased dish.

For the flan:

 

1 - Beat the eggs with the sugar.

 

2 - Pour the evaporated milk, add the coconut, and stir to combine.

3 - Pour coconut mixture directly on the caramel.

4 - Fill shallow tray or shallow dish with water and bake for about 35-40 minutes at 350°F in a non-preheated oven.

5 - Once done, the top of the flan should be a nice golden color.

6 - Carefully remove dish from baking tray. Gently put a knife through the flan here and there so the caramel can be absorbed.

 

7 - Allow flan to cool slightly.

8 - With a knife, delicately go around flan to unstick it from the dish. Turn flan upside down on a serving plate.

 

9 - Reserve flan in the fridge, serve cold.
