Meringue Cookies
Ingredients
(For about 80 meringues)
3 egg whites (room temperature)
A pinch of salt
1/2 cup granulated sugar
1/2 cup + 1/4 cup powdered sugar
Food flavoring (peppermint, vanilla, lemon, lavender...)
Food coloring (optional)
Instructions
1 - Preheat oven to 225°F.
2 - Sift the two sugars together.
3 - Pour the egg whites into the bowl of a stand mixer, add salt. (If you want to add color to the meringues, add a few drops of food coloring now). Start whipping at moderate speed until foamy.
4 - Add the sugar 1/2 cup at a time, and whip on maximum speed for about 2 to 3 minutes between each addition until the sugar has completely dissolved, scraping the bowl as needed. Whip to peaks.
5 - Once the meringue is shiny, thick, and tripled in volume, add a few drops of food flavoring and whip a few more seconds to combine.
6 - Pour the meringue in a piping bag using the nozzle of your choice and pipe small size meringue cookies or kisses onto baking trays lined with parchment paper.
7 - Bake for 40 minutes to 1 hour or until the meringues are completely dry.
