Mexican Salad

Ingredients

(For 6 people)

1 15oz can black beans

1 15oz can sweet corn

2 tomatoes

1 bell pepper (any color)

1 onion

3 branches green onion

2 garlic cloves

A handful fresh cilantro

The juice of 1 lime + zest

3 Tbsp olive oil

1 Tbsp balsamic vinegar

1/2 tsp paprika

Salt & pepper to taste

 

 

Instructions

 

1 - Rinse and drain beans.

 

2 - Drain corn.

 

3 - Dice the tomatoes, bell pepper, and onion. 

4 - Slice or cut green onions with scissors.

5 - Mince garlic.

6 - Chop cilantro.

7 - In a small bowl, collect zest and juice from lime. Pour olive oil and vinegar. Stir to combine.

 

8 - Put all the ingredients in a large bowl.

 

9 - Pour lime dressing and sprinkle with paprika.

10 - Add salt & pepper to taste. Stir and serve.

*** Add avocado and jalapeños for more flavor.
