Moist Gingerbread

Ingredients

​

1 cup almond flour

1 cup + 2 Tbsp flour

1/4 tsp baking soda

1 tsp baking powder

1/2 tsp anise powder

2 Tbsp ground cinnamon

1 1/2 tsp ground ginger 

1/2 tsp 5 spice

1/4 tsp cardamom powder

A pinch of salt

1 cup milk

1 star anise

1 tea bag chai tea

1/2 cup honey

1/2 cup brown sugar

3 eggs

1/2 cup vegetable oil

1 tsp vanilla extract

Instructions

​

1 - ​Preheat oven to 350°F and grease a loaf pan.

​

2 - In a large bowl, mix together all the dry ingredients except the brown sugar and star anise. Set aside.

 

3 - Over medium heat, boil the milk with the tea bag and star anise. Set aside for a few minutes.

 

4 - Remove tea bag and star anise.

​

5 - Add the honey, bring back to low heat and stir to combine. Remove from heat once honey is melted.

​

6 - In the bowl of a stand mixer, mix together the eggs and brown sugar. 

​

7 - Add vegetable oil and vanilla extract, stir.

​

8 - Add in the dry ingredients and mix pouring the milk gradually.

​

9 - Pour batter into the prepared loaf pan.

​

10 - Bake for about 45 minutes. If bread gets too dark too quickly, cover with aluminum foil.
