Mustard Pie

Ingredients

 

For the crust:

 

1 1/3 cups + 4 Tbsp flour

1 stick soft butter

1 egg

1 or 2 Tbsp water

A pinch of salt

Instructions

 

1 - Preheat oven to 350°F.


2 - Mix with your hands the flour with the butter until you obtain a sand-like texture or use a stand mixer.


3 - Add the egg and the salt. Gradually add water stirring until dough comes together.

 

4 - Place in the fridge for 15 minutes wrapped in plastic wrap.


5 - Then with the rolling pin, spread your dough and place it in a greased and floured pie dish.


6 - Make some holes with a fork and bake for 15 minutes.

 

 

 

For the egg mixture:

 

3 eggs

1 cup heavy whipping cream

1/2 cup milk

2 to 3 tomatoes, sliced

3 Tbsp Dijon mustard

Salt and pepper to taste

Herbes de Provence

 

 

 

Instructions

 

1 - In a bowl, beat the eggs until foamy.

​

2 -  Add the cream and milk, salt and pepper to taste and beat.


3 - Add the mustard and beat.


4 - Pour your preparation on the pre-baked crust, and evenly place tomato slices on top. Sprinkle with herbes de Provence.


5 - Bake for about 25 minutes or until golden and cooked through.
