Myriam's Quiche
Ingredients
For the crust:
1 1/3 cups + 4 Tbsp flour
1 stick soft butter
1 egg
1 to 2 Tbsp water
A pinch of salt
2 Tbsp butter in pieces
For the filling:
1 onion, diced
2.5 oz bacon bits or diced ham
1 Tbsp butter
3 eggs
3/4 cup heavy whipping cream
3/4 cup milk
1/4 tsp nutmeg
Salt and pepper
Grated cheese
Instructions
For the crust:
1- In a large bowl, work the flour and the butter with your hands until you obtain a sand-like texture.
2 - Add the egg, the water, and the salt. Work with hands until dough comes together and form a ball (add more water if dough doesn't come together).
3 - Place in the fridge for 15 minutes wrapped in plastic wrap.
4 - Preheat oven to 350°F.
5 - Butter and flour a pie dish.
6 - Flour a flat surface and spread dough with a rolling pin. Place in dish.
7 - Prick crust with a fork, add the butter in pieces here and there. Set aside.
For the filling:
1 - In a frying pan, cook over medium heat the onion and the bacon until crispy and brown with 1 Tbsp of butter.
2 - In a bowl, beat the eggs.
3 - Add the cream and the milk, beat to combine.
4 - Add the salt, pepper, and nutmeg and beat a few seconds.
5 - Add the cooked onion and bacon to the egg mixture. Stir delicately with a spoon.
6 - Pour mixture on crust and sprinkle with grated cheese.
7 - Bake for about 45 minutes. (If quiche becomes too brown too quickly, cover with aluminum foil).
