Neapolitan Style
Pizza Dough
Ingredients
(For about 12 10-inch pizzas)

2 1/2 cup warm water
1 packet instant yeast or active dry yeast
2 tsp honey or sugar
1 Tbsp salt
6 2/3 cup flour
Olive oil to coat the bowl

Instructions
​
1 - In a small bowl, stir together water and honey. Then sprinkle with the yeast and let sit 5 minutes then stir.
​
2 - In the bowl of a stand mixer, mix the flour and the salt with a wooden spoon until combined. Then pour the yeast mixture while kneading using the hook attachment on low speed.
​
3 - Keep kneading on medium speed until dough comes together (dough will be sticky).
​
4 - Cover the bowl with plastic wrap and let rise at room temperature for 5 hours.
​
5 - Transfer dough to a floured surface, and make a ball (or 12 small balls) by gently pulling the sides over the center several times.
​
6 - Lightly oil a large bowl with olive oil and place dough in the bowl. Cover with plastic wrap and reserve in the fridge until ready bake.

7 - About an hour before baking, make sure to remove the bowl from the fridge so the dough gets to room temperature.
