Stuffed Vegetables
Ingredients
(For 5 people)
4 tomatoes
2 zucchinis
3 peppers
2 onions
1 Lb ground pork
1.115 Lb ground beef
2 slices of bread
Milk
2 eggs
A handful of fresh parsley + a few branches for decoration
4 garlic cloves
Salt and pepper to taste
Olive oil
Grated parmesan
Instructions
1 - Preheat oven to 400°F.
2 - Wash and cut the vegetables.
3 - Boil water in a pot and cook the zucchinis for 2 minutes. Drain and rinse with cold water.
4 - Remove the pulp and seeds from the tomatoes and the zucchinis, dig out the hearts of the onions to make room for the stuffing and blend together to make a purée.
5 - In a small bowl, soak the bread with a little bit of milk.
6 - Chop the parsley and garlic together.
7 - In a large bowl, mix together the pork and the beef, the vegetable purée, the garlic with parsley, add salt and pepper to taste. Mix with your hands until combined.
8 - Add the eggs and the soaked bread and continue mixing with your hands until everything comes together.
9 - Stuff the vegetables and place them in a large dish lightly greased with olive oil.
10 - Sprinkle with parmesan.
11 - Drizzle with olive oil.
12 - Bake for about 45 minutes to 1 hour.
13 - Garnish with parsley before serving.
