Tarte Tatin
Ingredients
For the crust:
1/2 + 1/3 cup + 4 Tbsp flour
4 Tbsp sugar
5 Tbsp soft butter
1 egg
1 Tbsp water
A pinch of salt

For the caramel:
1/2 cup sugar
3 Tbsp water

About 4 to 6 apples, peeled and roughly cut into medium-size cubes
Cinnamon for dusting

Instructions
​
For the crust:
1 - Preheat oven to 350°F.
2 - Working with fingers, mix the flour with the sugar and butter until you obtain a sand-like texture.
3 - Add the egg, the water, and the salt and stir together to form a nice dough.

4 - Wrap dough in plastic wrap and reserve in the fridge.
Make the caramel:
1 - Grease a 9 inch pie dish with butter. Set aside.
2 - In a small saucepan, boil the sugar and the water together. DO NOT STIR.
3 - Once the caramel has a light to medium brown color, (not dark!), remove from heat.
4 - Pour 1 tsp of cold water on the caramel (watch out for hot projectiles). Use a spoon to stir until you obtain a clear, liquid caramel.
5 - Pour caramel in the dish.
6 - Arrange the apples on the caramel, packing them into the dish.
7 - Spread the dough into a circle and place on top of the apples pushing down the edges inside the rim of the dish.
8 - Bake in the oven for about 25-30 minutes or until just golden.
9 - Allow to cool slightly and turn the pie upside down on a plate.
10 - Lightly dust with cinnamon.
