Tuscan Soup
Ingredients
1 Lb sausages (Italian or smoked)
3 Tbsp butter
1 big onion
4 garlic cloves
4 cups chicken broth
2 cups water
1 Lb potatoes
1/4 cup wild rice or 1 15.5 oz can cannellini beans (drained)
1 Tbsp Italian seasonings
Red pepper flakes to taste
Salt & Pepper to taste
2 1/2 cups fresh spinach leaves
2 cups heavy whipping cream
Instructions
1 - Cut the sausages and potatoes into small pieces, dice the onion, and mince the garlic.
2 - Brown sausages in a skillet over medium heat. Transfer to a bowl and set aside.
3 - In the same skillet, melt butter and cook the onions until soft. Add garlic and cook until fragrant.
4 - Transfer onions and garlic to a large pot. Add chicken broth, water, potatoes, Italian seasonings, wild rice, salt & pepper, and red pepper flakes. Bring to a boil and cook until potatoes are tender and rice is fully cooked (about 20 minutes).
5 - Add spinach leaves, heavy cream, and sausages and stir.
6 - Serve immediately.
*** Substitute potatoes for gnocchi!
